This is for Judy who asked for the recipe for my salsa. I found it online but can't remember where (kuddos to the lady who posted it because it is great) and modified it to my liking. Hope you enjoy it. I made the salsa from my garden and used what I had other than a few items. I didn't always have 2 red bell peppers so I would just use all green peppers. I found that my jalapenos were very hot so as I did different batches I tried different amounts of jalapenos with seeds removed (half and half worked the best for us although it was still a little hot for my daughter). So it just depends on how hot you want it. Also, most of the time I cut the recipe in half because I would make it as the veggies ripened and my garden was very small.
Judy I love your idea of decorating the jar with vinyl peppers and giving as gifts.
Easy Salsa Recipe
30 tomatoes peeled and chopped
2 green bell peppers
2 red bell peppers
10 cups chopped onions
10 cloves garlic (I used minced garlic that I had on hand)
1 cup chopped jalapenos
1/2-3/4 cup sugar ( I used 1/2 cup)
2 cups vinegar
8 teaspoons pickling salt
2 teaspoons black pepper
2 large cans tomato paste
Simmer 1 1/2 hr, stirring often, at the end of cooking time add 1/2 bunch of cilantro if desired.
Jar and process, 35 minutes for pint jars and 45 minutes for quart jars.
Makes 17 pints
